Austrian Cuisine by Silvio Nickol

Winter session of the Masters of Food & Wine 2017

Ararat Park Hyatt Moscow, in partnership with the Austrian Tourism Office, will arrange the winter session of the Masters of Food & Wine 2017 gastronomic festival which will take place on 11-17 December at the Conservatory Lounge & Bar and will be dedicated to the Austrian Cuisine presented by our special guest two Michelin star Chef Silvio Nickol. 


Silvio Nickol was awarded with two Michelin stars and four Gault Millau toques (19 points), making him one of the most successful chefs in Austria. Since 2011 Silvio Nickol has been in charge of Palais Coburg’s gourmet restaurant, which considered one of Austria’s finest ever since it opened. It is important to Nickol that his cooking philosophy is not pigeonholed: “I grew up with classic cooking, which still has its place. But obviously you grow in the course of your career, and in the last two years we’ve started to focus even more heavily on the essentials, with a greater emphasis on taste. Our dishes have become simpler and the taste is centred on the small number of components on the plate.” 


On the 11th December only Chef Silvio Nickol himself will prepare a dinner set menu available during dinner time at the Conservatory Lounge & Bar, overlooking the historical heart of Moscow, on the 10th floor of Ararat Park Hyatt Moscow. (Available for dinner only)


From 12th until 17th December as part of our Masters of Food & Wine program guests will be able to choose signature dishes for lunch or for dinner from the set menu specially created by Chef Silvio Nickol prepared by our Executive Chef Sebastian Kellerhoff at the Conservatory Lounge & Bar.
